Chocolate chip, fruit cocktail, Noodle Kugel




We are trying to make something for a meal or side dish, that everyone will eat. The idea is to entice a preschooler who is a chocolate lover. As she said to me, "Auntie Rosie, I love any kind of chocolate."
I thought of lots of recipes and then came up with this one. This recipe makes 12 kugle cupcakes and one larger, flatter, 9" x 13", kugel. I will also include the ingredients for a dozen kugelettes and a larger rectangular 9" x 13" thicker kugel.

The recipe for 12 cupcake kugelettes and one 9" x 13" rectangular pan of thin kugel include:

butter and/or cooking spray (I suggest using both in the cupcake tins)
22 ounces of medium noodles
6 large eggs slightly beaten
10.3 ounces (two small containers) of vanilla, Greek Yogurt
1 cup of dried cranberries (craisins or raisins)
2 cans of fruit cocktail in juice (drain, but save the juice from both cans)(save a few cherries too)
1 teaspoon of cinnamon
1/4 cup or more of mini chocolate chips

Take the cold eggs and the yogurt out of the refrigerator for a few minutes.

Preheat the oven to 350 F.

Spray and butter the insides of the cupcake and rectangular baking pans.

Boil the 22 ounces of noodles in a large pot per package directions, drain well, and set aside to cool. In another bowl, beat the 6 eggs slightly, add the yogurt, add the dried cranberries (or raisins), and add the drained two cans of fruit cocktail, saving the fruit juice. Add the cinnamon and stir the egg mixture gently. One should have about one cup of fruit juice for later use in the baking of the kugelettes and larger kugel.

Temper the egg mixture by adding a few of the luke warm noodles (tempering not needed if cooked noodles are at the same temperature as the egg mixture). Then gently add the entire egg mixture to the big pot of drained noodles. Fill the well-greased cupcake tins and 9" x 13" pan. Add mini chocolate chips to the tops of the kugels and add a cherry, dried cranberry or other fruit for extra decoration.

Bake at 350 F for about 20-30 minutes and spoon 1-2 tablespoons of the saved juice on each of the 12 kugels and spoon the rest of the canned juice on the large kugel. Bake for an additional 15 minutes or until the tops look brownish and crunchy.


Cool slightly and gently remove all of the kugels from the pans.

Kugels may be eaten at any temperature, warm, hot, or cold.


To make a thicker rectangular kugel, in addition to the 12 smaller round kugels use:

33 ounces of noodles
3-4 cups of vanilla, Greek yogurt (15-20 OUNCES)
9-12 eggs
3 cans of fruit cocktail
1-2 cups of craisins or raisins
2 teaspoons cinnamon (optional)
mini chocolate chips per taste (optional)

Delicious Easy Hot Oatmeal with an incredible Aroma!

We love Quaker's Old Fashioned Oatmeal. Mine soaking in a pot as I write this. Since I tend to have a lot of dental work, I have been looking at what best to eat? What I eat got my attention per my check-up last year, and breaking the back of a tooth down to the bone about two weeks ago.

I was never crazy about hot oatmeal, but love it now per the way I make it. My husband loves it now too. He used to be a cold cereal eater -- those boxes are standing around, while I buy huge boxes of oatmeal and my blood work has never been better.

I cut a small banana, a fresh apple into thin small slices, dried cranberries, or whatever fruit is in the house and add it to my "Old Fashioned" Quaker Oats in a saucepan. I cover it with about 50/50 water and Blue Diamond Almond Milk as we need the calcium (twice the calcium in cow's milk). You can make it with all water or all milk of any kind too. The dried cranberries will become soft.

I let it sit for awhile together, covered in liquid, and will then cook it slowly. Sometimes I stop as tend to burn meals when I blog. Here is what it looks like so far. You can see the oatmeal underneath and banana, apple, and dried cranberries. Sometimes I only use banana, other times only apple or dried cranberries, but am doing all today and it will be delicious!



Here, I am covering it with 50/50 Almond Milk (the one with 30 calories in a glass) and water, or one can use any combination, just cover it -- does not matter if a little more liquid as it will get cooked into the oatmeal shortly.

It smells heavenly when the banana cooks in the oatmeal, the fresh apple is soft and the cranberries plump-up -- can you see?



Oatmeal finished -- soft enough for me but it could be cooked longer -- the apple is very soft and the the banana gives it the most heavenly aroma. Sometimes I put ground flax seed on top -- as it is very reasonable at COSTCO. The only way my husband will eat ground flax is on top of his oatmeal. I sneak it in lots of things when he is not looking! We lean to vegetarian so have to get plant sources for our Omega-3. Do not buy un-ground flax seed as humans can not digest the tiny seeds. It holds up well in the refrigerator if you can not eat it all and my husband will microwave it when he is in the mood --- "Oatmeal is not just for breakfast anymore, as it is a great snack."

And as my great-niece would sing to the tune of 3 blind mice:
"Hot Oatmeal, hot oatmeal, yummy, yummy, in my tummy, hot oatmeal."

A Birthday Party to Remember

The weather in Cleveland has not improved, but we made it to Austin, Texas, for a few days for our great-niece's 2nd birthday party. My niece Julie made some wonderful foods for the children (and adults) attending the party at the Austin Dog Alliance. Compare the photographs of Cleveland, Ohio, to Austin, Texas, on approximately the same day in February!

                                                                           



One child filled his plate with a selection of very healthy and colorful combinations of fruit, cheese, and crackers.

                                                                                     
 

For easy to handle food for children, and adults, Julie made some doggie's in a blanket (a small piece of hot dog embedded in dough,) which can be made from most any kind of pastry that can be wrapped around a small piece of meat. Per my former life in intensive care units, hot dogs can be very dangerous food for young children, so always be very cautious in this respect. Small pieces of multi-colored cheese and cut up fruit were most colorful on the buffet table.

Cupcakes on a cup-cake-tree were a wonderful addition and my niece had the most fluffy cupcakes covered in white icing with multi-colored sprinkles. Lemonade was available for the guests and the hosts were two very well-trained dogs, both named Max.
